Penne pasta of choice
1 Cup Vodka
1 Can Tomato Sauce (Hunt's)
1 Can Tomato Paste
Fresh Diced Tomatoes
1/2 Medium-sized Diced Onion
1/2 Cup Grated Parmesan Cheese
1/3 Block of Extra Sharp Cheddar Cheese
1 Tablespoon Mrs. Dash Italian Seasoning (Oregano, Basil, Onion & Garlic Powder Mix)
2 Tablespoons of Crushed Red Pepper (or less if desired to be less spicy)
1 Cup Heavy Whipping Cream (or Fat Free Half & Half for a lighter option)
Pour Tomato Sauce into a Sauce pan to simmer adding Vodka, 1 tablespoon of tomato paste, crushed red pepper and italian seasoning mix. Simmer for about 20 minutes stirring occasionally allowing flavors to blend and steep together. (If blend seems a little runny, continue to add tomato paste until it reaches desired thickness).
In a separate sauce pan over medium heat brown/caramelize fresh tomatoes and diced onions with EVOO, salt and pepper.
While sauce is simmering, cook your penne. Once cooked and drained, return to pot over medium heat, add tomato sauce mix with browned tomatoes and onions. Add 1 cup of cream of choice (heavy whipping cream or half & half), as well as, PARMESAN and Sharp Cheddar cheeses. Stir for about 5 minutes allowing cheeses to melt and flavors to blend together.
